Nè Rosso Nè Rosa | Sinubìo is a IGP TERRE SICILIANE wine produced on sandy soil in the Sinubìo area of Marsala, which gives it a light ruby red color with a fruity and spicy aroma enveloped in elegant hints of cherry, vanilla, and black pepper. It is full-bodied and pleasantly structured on the palate.
The grapes are harvested by hand, placed in crates, and refrigerated so that they can be transported intact to the cellar. They are then destemmed, followed by maceration for about 48 hours, after which fermentation continues without the skins.
Aging takes place for about 8 months in the same fermentation tanks, during which time the yeast lees are regularly stirred.
It pairs very well with white meat dishes and fish sauces.
