Nero d'Avola | Sinubìo is a DOC wine produced on sandy soil in the Sinubio area of Marsala, which gives it a light ruby red color and a fruity, spicy aroma enveloped in elegant hints of red fruits, vanilla, and black pepper. On the palate, it is full-bodied and pleasantly tannic.
The grapes are harvested by hand, placed in crates and refrigerated before being taken intact to the cellar. They are then destemmed, followed by 5 days of fermentation and three weeks of maceration in steel. The wine is aged for 9 months in French oak barriques, after which it matures in the bottle for a further 2 months.
It pairs very well with red meat dishes and game, but at lower temperatures it also goes well with bluefin tuna.
