Zibibbo | Sinubìo is a TERRE SICILIANE IGP wine produced on sandy soil in the Sinubìo area of Marsala, which gives it a straw yellow colour and a fruity aroma, enveloped in tropical scents of orange blossom and apricot. On the palate, it is dry, savoury and persistent.
The grapes are harvested by hand, placed in crates and refrigerated before being taken intact to the cellar. They are then destemmed before undergoing cold maceration for 72 hours, followed by fermentation in steel tanks. The wine is aged for about 7 months in the same fermentation tanks, during which time the yeast lees are regularly stirred.
It pairs very well with traditional Mediterranean dishes based on fish and shellfish.
